Shrimp caught in the Gulf of Mexico are graded by size. The grader weighs out a pound of shrimp, then counts each shrimp. The grader repeats this process several times, then declares the grade based on calculating the average of each count. For example, 16/20 Grade shrimp averages between 16 and 20 shrimp per pound. The larger the shrimp, the lower the count per pound. Also, larger shrimp command a higher price. Raw shrimp are the processed further, by removing the heads, peeling and/or de-veining.

Freshly caught Gulf Shrimp is generally available during in-shore shrimp season, which lasts from April until November. Frozen Gulf Shrimp is available year-round.
